Ingredients

  • 4 c cooked day old rice

  • 2 tbs butter

  • ½ c shallot (diced)

  • ½ c green bell pepper (diced)

  • ⅓ c celery (diced)

  • 2 tbs garlic (minced)

  • 1 tsp ginger (grated)

  • ½ lb andouille sausage (¼ inch slices)

  • ½ lb crawfish tails

  • ⅓ c carrots (diced)

  • ⅓ c peas

  • 2 eggs

  • 1 tsp sesame oil

  • 2 tbs soy sauce

  • 2 tsp oyster sauce

  • 2 tbs mirin

  • Tony Chachere’s More Spice Seasoning to taste

  • Chives for garnish

Directions

  • In a wok or large skillet over medium-high heat, melt the butter and sear the sausage for 3 minutes. Remove the sausage with a slotted spoon.
  • Pour in sesame oil and add in the shallots, bell peppers, and celery. Saute for 3 minutes or until tender. Add in garlic, ginger, peas and carrots and cook for 2 minutes.
  • Push everything to one side of the pan and pour in eggs. Scramble then mix into the vegetables.
  • Add the sausage back along with crawfish and rice. Pour in all the sauces and stir fry until everything is well combined.
  • Season with Tony Chachere’s More Spice to taste, garnish with chives and just like my name, you’re all done!
