Ingredients

  • Brine Ingredients: (Optional)
  • 4 c water

  • ¼ c salt

  • 2 tbs brown sugar

  • Chicken Ingredients:
  • 4 bone-in chicken thighs

  • 2 tbs olive oil

  • 1 tsp Italian seasoning

  • 1 tsp dried oregano

  • ½ tsp dried rosemary

  • ½ tsp dried thyme

  • ¼ tsp pepper flakes

  • Zest of a lemon

  • 1 tbs garlic paste

  • 2 tsp Southern Made Creole Seasoning

  • Tuscan Cream Sauce:
  • 2 tbs unsalted butter

  • ½ c shallots (chopped)

  • 1 tbs garlic paste

  • 1 tbs all purpose flour

  • ¾ c chicken stock or broth

  • 1 c heavy cream

  • ½ c sundried tomatoes (julienned)

  • 2 c fresh baby spinach (chopped)

  • ½ tsp Italian seasoning

  • ½ tsp black pepper

  • Southern Made Creole Seasoning to taste

Directions

  • Brining (Optional)
  • In a sauce pot over medium heat, add all the brining ingredients and mix until everything is dissolved. Remove from heat and let cool. (Add a few ice cubes to speed up the process.)
  • Add your chicken to a large bowl or container and pour the brine on top. Close with a lid and place in the refrigerator for 30 minutes.
  • Remove from the brine, pat dry and discard the brine.
  • Cooking The Chicken
  • Preheat the oven to 400 degrees F.
  • In another bowl, add all the chicken ingredients besides the creole seasoning. Mix until well combined and then coat the chicken in that mixture.
  • Season the chicken on both sides with the Southern Made Creole Seasoning.
  • Place a wire rack on top a cooking sheet and place your chicken on top.
  • Bake in the oven for 35-40 minutes or until the internal temperature of the largest piece of meat reads 170 degrees F.
  • Tuscan Cream Sauce
  • In a saucepan over medium-high heat, melt the butter and sauté the shallots for 4 minutes. Sprinkle in all purpose flour and cook for an additional 2 minutes.
  • Add in garlic paste, chicken stock and chicken broth.
  • Bring to a boil, reduce to a simmer and let cook for about 3 minutes to thicken.
  • Pour in sun-dried tomatoes, spinach and parmesan cheese. Still until combined.
  • Season with Italian seasoning, black pepper, and creole seasoning to taste. Remember, “If you ain’t sneezing, it ain’t seasoned!”
  • Remove from heat, add over your baked chicken thighs and just like my name, you’re all done!
