Sweet meets savory with this crispy fried chicken coated in a warm truffle honey butter!

Ingredients

  • 4 boneless, skinless chicken thighs

  • 1 tbs avocado oil or olive oil

  • 1 tsp granulated garlic

  • 1 tsp granulated onion

  • 1/2 tsp ground mustard

  • 1 tsp smoked paprika

  • 1/4 tsp cayenne powder

  • 1 tsp Southern Made Creole Seasoning

  • Dry Batter
  • 1 1/2 c all-purpose flour

  • 1/2 tsp granulated garlic

  • 1/2 tsp granulated onion

  • 1/4 tsp ground mustard

  • 1/2 tsp smoked paprika

  • 1/4 tsp cayenne powder

  • 1 tbs Southern Made Creole Seasoning

  • Wet Batter
  • 1/2 c dry batter

  • 1 egg

  • 1 c water

  • Truffle Honey Butter
  • 1/3 c truffle honey

  • 2 tbs unsalted butter or ghee

Directions

  • In a large bowl, add in chicken, oil and all of the spices. Remember, “If you ain’t sneezing, it ain’t seasoned!” Mix together until well coated and set aside.
  • In another bowl, combine all the dry batter ingredients. In a third bowl, take 1/2 c of the dry batter and mix with egg and water.
  • Dredge the chicken into the dry batter then into the wet batter and finally the dry batter once more. Shake off excess batter between each dredge.
  • Place the battered chicken on a wire rack and let rest for 15 minutes to allow the batter to set in.
  • Add about 3 inches of oil to a frying pot and heat to 350°F (175°C).
  • Fry the chicken in batches for about 10-12 minutes. The exact time can vary depending on the thickness of the chicken thighs and the consistency of the oil temperature.
  • It’s important to monitor the internal temperature of the chicken to ensure it’s fully cooked.Use a meat thermometer to check the internal temperature of the chicken thighs. They should reach an internal temperature of 165°F (75°C) to be considered fully cooked and safe to eat. I prefer to cook thighs to 170°F
  • Remove the chicken from the oil, drain excess oil and place on a wire rack or plate topped with a paper towel.
  • In a microwave safe bowl, combine the truffle honey and butter. Microwave for 30 second intervals until butter is melted. Mix together and drizzle on top of the fried chicken.
