The Best Blueberry Bread Pudding With White Chocolate Sauce

What is Bread Pudding?

Bread Pudding is a combination of stale bread cut into bitesize pieces then dredged in a custard of milk, sugar and eggs. It is then baked until it is set making for a mouthwatering dessert.

Bread Pudding originated in the 11th century as a way you use leftover stale bread. It was referred to as the “poor man’s pudding”. It was made with boiling water, sugar and spices. Centuries later milk and eggs were added. This is where it began to grow in popularity and evolved into the delicious dessert we know so well today.

What Bread To Use

You should use a firm and hearty bread that can withstand the moisture from the custard without getting soggy and falling apart. My favorite bread to use is day old French bread. It’s cheap, easy to find in New Orleans and it absorbs the custard perfectly while holding its shape.

Bread Pudding Made Simple

If you never made bread pudding before, this recipe will have you wondering why not! It is super simple to make and will surely please that sweet tooth craving.

Slice the bread into 1 inch cubes and place aside. In a large bowl combine all the custard ingredients. Simply pour the custard over the bread, allow it time to soak and then add it to a baking dish. Sprinkle in your favorite fruits. For this recipe I went with fresh blueberries. I top mine with a sweet butter crumble to help caramelize the top but we will get to that later.

From there all you have to do is bake it make a sauce to pour on top and you are good to go!

White Chocolate Topping

This is super simple to make and taste so great on top the warm bread pudding.

  1. In a sauce pot, add evaporate milk and bring it to a boil. Once boiling, immediately remove from heat.
  2. Add in white chocolate and vanilla extract and stir until melted. Its that simple!

Key Ingredients

Stale Bread- Stale or day old bread is what I recommend because it holds its shape well in this recipe.

Eggs- This will help with binding all the ingredients together.

Evaporated Milk and Whole Milk- This will add a rich and creamy flavor to the pudding.

Sugar and Spices- For my bread pudding I add a combination of sugar, cinnamon and nutmeg for the perfect flavor profile.

Blueberries- I like to use blueberries because it adds a nice tartness to a very very sweet dish. In my opinion it balances the flavors well.

Ingredients

  • 5 c day old French bread (1 inch cubes)

  • 3/4 c fresh blueberries

  • Custard
  • 2 c granulated sugar

  • 5 eggs

  • 1 c whole milk

  • 1 c evaporated milk

  • 2 tsp pure vanilla extract

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • White Chocolate Sauce
  • 1/2 c evaporated milk

  • 1 tsp pure vanilla extract

  • 8 oz melting white chocolate

  • Topping
  • 1/4 c butter (chopped into small pieces)

  • 1/2 c light brown sugar

  • 1 1/2 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1 c toasted pecans (roughly chopped)

Directions

  • In a large bowl, add the eggs sugar. Using a whisk or hand mixer, mix until well combined. Add remainder of the custard ingredients and whisk until everything in well incorporated. Add the bread to the bowl and push down to make sure every piece absorbs the liquid. Put that to the side to rest for 15 minutes.
  • Preheat the oven to 350 degrees Fahrenheit and butter a 9×13 baking dish.
  • In another bowl, combine all the topping ingredients and mix together until crumbly.
  • Add half of the bread to the baking dish in an even layer. Sprinkle in half of the blueberries and then add the remaining bread on top. Evenly distribute the butter topping over the bread and finish it off with the remaining blueberries.
  • Cover the baking dish tightly with foil and bake in the oven for 35 minutes. Remove the foil and bake for an additional 10-14 minutes or until the custard is absorbed and the top is golden brown.
  • White Chocolate Sauce
  • In a sauce pan over medium-high heat, pour in evaporated milk. Bring to a boil and immediately remove from heat.
  • Add in white chocolate and vanilla extract then mix until the chocolate is melted.
  • Serve over the bread pudding and just like my name, you’re all done!
