How To Make Copycat Chicken Minis

Step 1: Brine the chicken– This is a key step in making sure you come out with super juicy and tender chicken as well as locking in that great briny flavor!

Step 2: Mix the batter- The combination of flour, breadcrumbs, powdered sugar and spices are going to take the chicken to the next level. Set up your station so you’re ready when the chicken is done marinating.

Step 3: Dredge the chicken- Coat the chicken in the batter shake off the excess, let rest and get ready to fry!

Step 4: Heat the oil- In a large frying pot, add about 2 inches of oil and heat to 350°F.

Step 5: Bake the rolls- Pop the rolls in the oven while the chicken is resting and the oil is heating up.

Step 6: Everything tastes better fried– Fry the chicken in batches until cooked through and golden brown.

Ingredients

  • Breading:
  • ¾ c flour

  • ½ c breadcrumbs

  • 2 tbs powdered sugar

  • 2 tsp southern made creole seasoning

  • 1 tsp chili powder

  • Chicken Brine:
  • 1 lb boneless, skinless chicken breast (cut into 1 inch cubes)

  • ½ c dill pickle juice

  • ¼ c water

  • 1 tbs hot sauce

  • Other Ingredients:
  • 1 pack Sister Schubert’s Parker House Style Yeast Rolls

  • 1 tbs honey

  • 2 tbs butter, melted

  • oil for frying

Directions

  • In a large bowl with a lid or gallon Ziploc bag, add in the chicken pieces along with pickle juice, water and hot sauce. Refrigerate and let marinate for 2 hours.
  • In another bowl, combine flour, breadcrumbs, powdered sugar, chili powder and creole seasoning. Mix until well combined and set aside. Remember, “If you ai’t sneezing, it ain’t seasoned!”
  • Remove the chicken from the brine and dredge in the flour mixture. Allow the chicken to rest on a wired rack for 15 minutes to allow the coating to stick.
  • Heat oil to 350°F in a large pot or Dutch oven.
  • Fry the chicken in batches for 4 minutes or until golden brown and crispy. Remove and place on a clean wired rack.
  • Bake the yeast rolls in the oven according to package directions. Combine honey and butter and brush the top of the rolls once they come out of the oven.
  • Assemble the chicken on the rolls and just like my name, you’re all done!
