Party Rice!

Traditionally “Party Rice” is cooked over an open fire leaving the rice with a smokey flavor. To do this at home, simply crank up the heat to high once the rice is done. Let it cook for about 3 minutes to essentially burn the bottom layer of the rice to develop that smokey flavor. Turn the heat off and keep the lid on until you are ready to serve so the rice can trap in that smokiness.

While burning the bottom of Jollof Rice is an optional step, it’s important to note that not everyone prefers this approach. Some individuals might not enjoy the smoky or caramelized flavors, and a burnt bottom can be an acquired taste. It’s always a good idea to consider the preferences of your guests or diners before incorporating this technique.

Ingredients

  • Pepper Puree Ingredients:
  • 1 tbs olive oil (more as needed)

  • 3 red bell peppers (Sliced into 4 pieces)

  • 2 habanero peppers (or scotch bonnet(sliced in half)

  • 1 garlic bulb (top cut)

  • 2 medium tomatoes (halved)

  • 1 red onions (cut into 4 pieces)

  • 1 inch piece of ginger

  • ¼ c water

  • Rice Ingredients:
  • 4 c parboiled rice

  • ½ c palm oil or vegetable oil

  • 1 red onion (sliced)

  • 4 tbs tomato paste

  • 2 c chicken or vegetable stock

  • 1 ½ tbs salt + more to taste

  • 1 tsp cayenne pepper

  • 1 tbs paprika

  • 1 tbs chicken bouillon powder

  • 3 bay leaves

  • 1 tbs curry powder

  • 1 tbs fresh thyme leaves

  • ¼ tsp nutmeg

Directions

  • Preheat the oven to 400 degrees.
  • Add all of the sauce vegetables except for the ginger to a large baking dish and coat with olive oil. Roast in the oven for 40 minutes then turn the broiler to high for 5 minutes. (Roasting is optional but I highly recommend.)
  • Remove and place the roasted vegetables into a blender along with ginger and water. Blend until the vegetables are puréed . Set aside.
  • In a dutch oven or large pot over medium heat, add in vegetable oil and fry the red onion for 5 minutes. Add in tomato paste and fry for an additional 5 minutes stirring constantly.
  • Add in 3 cups of the pepper puree along with all of your seasonings and spices. Remember, “If you ain’t sneezing, it ain’t seasoned!” Cook over low heat for 20 minutes, covered, to avoid splashing.
  • Stir in parboiled rice until well coated in the sauce. Add in enough stock to cover 1 cm over the rice. Bring to a boil for 2 minutes and reduce the heat to low. Cover the top with foil and then the lid to promote steaming. Let cook for 30 minutes.
  • Remove the foil, fluff the rice and season to taste with salt as needed. If the rice is still not done, add ¼ c to ½ c of water and continue cooking for another 10 minutes or until tender.
